As it’s getting closer to dinner time I’m reluctant to leave my revisions of Love is Blind to cook dinner. I’m on a roll and, if not for the groaning family in the background, I’d probably continue skipping or reducing my food intake to work. As it is, everyone is hungry and nobody knows what they want.
Standing at the refrigerator door, staring at the randomness inside, all I can think is “What to cook. What to cook.”
And the answer comes, Hestia says soup for the cold day, Lyna suggests using the leeks before they spoil. Cream of Leek and potato Soup! Yum! And it’s even something my picky eaters will enjoy. I could live off this gentle oniony-potato soup.
Cream of Leek and Potato Soup
Place 3 cups of sliced leeks, 3 cups of chopped potatoes, 6 cups of water, 1 1/2 tsp salt, 1/8 tsp pepper, and 1/2 cup sour cream (I add a few more dollops of sour cream) in a 3-quart sauce pan to boil. Cover and simmer until veggies are tender. Puree and add 1/2 cup heavy cream. Simmer a few more minutes, serve, and enjoy! 😀
